Vegan Creamy Chocolate Mousse

Everyone likes a good dessert. And if it includes chocolate, then even better.

Looking around, I’ve found that shop-bought desserts that are both dairy and egg free are few and far between, and so I went online to search for something that both my little man would enjoy, and so would mummy & daddy…

This is when I came across the Super Healthy Kids website. On here, they list a Thick & Creamy Chocolate Mousse recipe, which seemed to be exactly what I was after. However upon making it, I found that although nice, it didn’t really hit the spot as I would have liked. It was far too sweet for us as adults, didn’t have the right consistency I wanted for the little man, and also wasn’t chocolately enough for my liking. So I decided to have a few attempts at adapting the original recipe to suit what I wanted, and ended up with the following.

I used almost all organic ingredients for this, except the coconut cream, as this was the only one available at the time. The recipe is super quick and easy to make, and can be served immediately, though I would recommend putting it in the fridge for a bit to harden, as otherwise it’s more like a chocolate sauce than a mousse!

Instructions
  1. Gather your ingredients together...
  2. Melt the chocolate - I put mine in the microwave for 45secs as it's the most convenient option for me
  3. Put all of the ingredients into a large mixing bowl, and mix until smooth using a blender (hand or stand blender)
  4. Divide evenly between your bowls. You could do 6x 100g servings or 12x 50g servings with this mix. I actually used some recycled glass GU dessert jars, which perfectly hold 100g servings
  5. Place in the fridge for at least an hour before serving. This allows the mixture to harden slightly, giving it a thick and creamy "cheesecake" consistency
  6. Serve with fruit - We found red berries go particularly well! πŸ˜‰
